Fresh Taihu Lake Icefish Whitebait

Very small, slender fish with a translucent silvery-white body, a dark line down the middle and a pair of tiny black eyes. They are laid out in a row on a wooden board, and heaped on two steel plates. One shot has a few of them pan-fried until golden, plated with a little spring onion.

They are delicate and cook in under a minute: dust them in flour and fry them crisp, drop them into a soup, or fold them through an omelette. They need no gutting or scaling.
