Fresh-Frozen Mantis Shrimp

Mantis shrimp split lengthwise and opened out, each one packed with bright orange roe. The shell is ridged and segmented over pale flesh, with banded tail fans. They are shown heaped on a plate and on a steel tray, and one shot has them cooked and reddened, with the roe set along the back.

Mantis shrimp have sweet, firm meat that sits somewhere between prawn and lobster, and the roe is the richest part of it. Steam them briefly, or split and grill them.

Keep frozen at -18°C or below. Thaw in the refrigerator and cook thoroughly before eating.
